Lapsang Souchong

Description:
Finest of smoked teas.   Beautiful long delicate leaves.     To produce Lapsang Souchong, the tea leaves are first withered over wood fires.   After pan-frying and rolling they are then pressed into wooden barrels and covered with cloth to ferment until they give off a pleasant fragrance following which they are rolled into taut strips and placed in baskets hung on racks over smoking fires to dry and absorb the smoke flavor producing thick glossy black strips of tea leaves.

Preparation: 

one level teaspoon per infusion,  brew three to five minutes dependant on strength required this pure leaf tea can be re-infused until all the essence has been brewed from the leaf

Self-drinking: the term given to single estate blended and unblended teas - the tea tasters expression for teas with sufficient aroma, flavor, body and color to stand alone without additives.
